Beef and Barley Soup to Warm You Up This Winter

Warm up your winter with delicious hot soup, featuring the kitchen all-rounder, Strucket Teenie!
You can whip up this tasty recipe in the morning before work and enjoy it for lunch or dinner.
With Strucket Teenie by your side, dinner time just got a whole lot easier.

To make this soup, you will need:

Ingredients


500g Chuck or Casserole Beef

Salt to taste
Pepper to taste
½ cup all-purpose flour
2 tablespoon olive oil 
1 large onion diced
1 large carrot diced
2 stalks celery diced
3 cloves garlic crushed
1 tablespoon dried oregano
3 tablespoon tomato paste
4 cups beef broth 
3 cups water
¾ cup barley 
1 tablespoon chopped parsely

Directions


Step 1

Pour pearl barley into your Teenie and add water to soak.

Add your flour to a bowl and season with salt and pepper. Add the beef to the flour mixture to coat the beef.

Place your casserole dish on the heat on the stove and add olive oil.

Sear the beef in olive oil until browned, you may need to do this in batches to avoid stewing the meet.  Once you have browned the beef place it aside.

Step 3

In the same pot, add more olive oil over medium heat.  Add the chopped veggies and garlic. Cook for 5 minutes, stirring occasionally while adding herbs.  You want them to begin to go cook but not too much.  Now add in your tomato paste and allow it to cook for 2 minutes with the veggies.  

Add in your stock, water and oregano and bring to a simmer.

Step 4

Add beef back into the pot and turn heat to medium, cover and cook for 30-45 Minutes stirring occasionally.

Strain the barley in your Teenie and pour barley into the soup mixture. The remaining water makes excellent plant food!  Cook the soup uncovered for another 30 minutes or until the barley is cooked through while stirring so it doesn't stick.

Garnish with some fresh parsley and enjoy your delicious soup!
