Sticky Satay Chicken Noodle Salad: An Easy Meal Prep with Strucket

Looking for a delicious and easy meal prep idea? This Sticky Satay Chicken Noodle Salad is the perfect combination of flavour and convenience. With the help of your Strucket Teenie and Strucket Mini, meal prep just got easier!

Ingredients:

Sticky Satay Sauce:

  • ¼ cup peanut butter
  • 1 garlic clove, minced
  • 1 tbsp sesame oil
  • 2 tbsp soy sauce
  • 2 tsp brown sugar
  • 2 tsp vinegar
  • 2 tbsp lime juice
  • 2 tbsp water
  • ¼ tsp salt

Salad:

  • Vermicelli noodles
  • 2 cups cabbage, shredded or grated
  • 2 carrots, finely chopped
  • ¼ tsp salt
  • 2 scallions
  • 1 large red chilli

Satay Chicken:

  • 350g chicken breast, halved vertically and thinly sliced
  • Salt and pepper to taste
  • 1½ tsp curry powder
  • 2 tsp sweet soy sauce/kecap manis
  • 1 tbsp cooking oil

Instructions:

Step 1: Marinade the Chicken
Start by grating your fresh ginger using the Strucket Teenie and the grater attachment letting the ginger fall into the Teenie container; now swap attachments and juice your lemon  with the Strucket Teenie juicer attachment, and then remove the attachment and add the ginger and dark soy sauce to the Teenie and Shake.  Pour the marinade over the chicken and set aside to let the flavours infuse.

Step 2: Prepare the Noodles
Cook your vermicelli noodles according to the packet instructions using your Strucket Mini. It’s hands-free straining and interlocking connection feature makes rinsing the noodles quick and mess-free!  Your Mini will tolerate boiling water.

Step 3: Cook the Chicken
In a pan, heat 1 tbsp of oil and fry the marinated chicken on medium heat until fully cooked. The aroma of the curry powder and soy sauce will fill your kitchen with a delicious fragrance.

Step 4: Assemble the Salad
Add your cooked and strained noodles and thinly sliced veggies, including cabbage, carrots, scallions, and red chilli, to the pan with the chicken. Toss everything together and let it sit for 5–10 minutes to allow the veggies to wilt slightly.

Step 5: Add the Satay Sauce
Mix all the ingredients for the Sticky Satay Sauce and either toss it through the salad or serve it on the side if you're prepping meals for later.
