Ancient Grain Hearty Soup with Strucket Teenie

This soup was delicious, packed full of flavour, using staple ingredients and fibre rich. I know you will LOVE it!

Using basic ingredients doesn't have to be boring and if you have 30 minutes spare, be sure to give this recipe a go.

Ingredients


1 cup Mckenzie's Ancient Grain Soup Mix
1 tbs olive oil
1 large onion, diced
3-4 cloves garlic, finely chopped
2 carrots, diced
2 celery sticks, sliced
2 tomatoes, diced
1 medium zucchini, diced
2L vegetable stock
Large handful baby spinach leaves
to taste, Salt 
to taste, Black Pepper
to garnish (optional) Sour cream, pesto & chilli flakes

Directions


Step 1

Before cooking, you will want to soak the soup mix.  This allows the outer shell to be softened which is much better for your digestion.  The Strucket Teenie is your perfect tool for this.  Just pour the packet of grains into the Teenie and add filtered, cool water.  Leave for up to 6 hours.

Step 2

Heat the oil in a large pot and add onion and garlic, cooking until just tender.

Step 3

Add carrot and celery to the pot and cook for 2 minutes. Add the pre soaked and drained soup mix, tomatoes, stock and zucchini.

Step 4

Bring to the boil and reduce to a simmer for approx. 25 minutes or until mix is just tender.

Step 5

Add baby spinach and stir through until just wilting. Season well with salt and pepper and serve. Add a dollop of sour cream, pesto and a sprinkling of chilli flakes if desired.
